A new wine bar style restaurant focused on showcasing international flavours (primarily European/Asian) in small and large plate formats alongside an award winning cocktail & wine programs

Responsibilities:


  • Oversees and assists the daytoday operation, organize the kitchen department and ensure smooth daily operations with standards/SOPs are met consistently.
  • Maintain complete knowledge of menus, items preparation method/time, quality standards, taste, texture, serving temperature, portion size and presentation method.
  • Provide accurate recipes with appropriate training to cooks enabling them to deliver consistent food products.
  • Assist individuals with their job functions and on the job training when necessary to ensure optimum service to customers, upgrading existing skills of his immediate subordinates.
  • Estimate food consumption to schedule purchases and requisition of raw materials. Minimize waste and spoilage to expenses in line with budget.
  • Prepare an efficient daily work list and train cooks to produce mise en place with a sense of priority and time management.
  • Ensure a cooperative and professional rapport is maintained with all external controls, management, and front of the house team. Fosters and promotes a cooperative working climate, maximizing productivity and employee morale.
  • Define SOPs and standards collaborative with the management.
  • Ensure monthly food costing is under certain level
  • Develop menus and kitchen recipes, making suggestions to the dishes concerning improvements that would result in more satisfied customers and/or increase the volume of business or profit.
  • Recommend new products which may improve the quality of food or lower food cost. Determine product prices, control costs, and maintain good gross margins.
  • Negotiate better payment terms and pricing with suppliers. Liaise with suppliers to ensure we have 3 alternative suppliers for all main ingredients.
  • Schedule working hours of the kitchen staff by taking into consideration the volume of expected business. Arrange staff for overtime if warranted by an unexpected business or release them earlier if the business is slow.
  • Recruit, train and be a mentor figure to team members reporting to him.
