Meredith Megan

My name is Meredith Poon, a dedicated early childhood educator and entrepreneur with a Master’s in Entrepreneurship and over 4 years of experience in early childhood education. As the founder of The Gingerbread Pan, I’ve combined my expertise in child development with innovative business strategies to create comforting, developmentally supportive plush toys that nurture children’s emotional well-being.

Through my career, I have designed engaging, child-centered curriculum frameworks, collaborated with stakeholders to promote social-emotional learning, and built strong relationships with parents to support children holistically. My experience in curriculum planning, coupled with my entrepreneurial background, equips me to understand the nuanced needs of young learners and create meaningful, impactful learning experiences.

I am eager to bring my unique blend of expertise in early childhood education and consumer insight to a Curriculum Specialist role, where I can contribute to designing programs that truly make a difference in the lives of children and families. 

I have over 4 years of experience in early childhood education, where I specialized in child development and curriculum planning. As a preschool teacher, I worked closely with parents and external stakeholders to support children’s holistic growth, incorporating innovative approaches like Reggio Emilia into my teaching.  

Beyond teaching, I founded The Gingerbread Pan, an eCommerce brand offering comforting plush toys designed to support children’s emotional well-being. Through this venture, I developed skills in product development, customer engagement, and brand building.  

My journey has allowed me to blend my passion for education with business innovation, creating meaningful, child-centered solutions that make a difference.

I hold a Bachelor’s degree in Early Childhood Studies and a Diploma in Early Childhood, which have provided me with a strong foundation in child development, curriculum design, and education theory. My studies focused on creating engaging, developmentally appropriate learning environments, understanding children’s holistic needs, and fostering meaningful partnerships with families to support their growth and well-being.
