Description

As part of our hardworking and dedicated Victus Catering team, you will take responsibility for a range of tasks from daily mise en place to pastry productions, and serve them with a smile to our customers.


Role Details

  • Location is a major international school in the Bukit Merah/Alexandra area


  • Required shift: Monday

  • Friday, Start 6:45am or 7:15am, typical end around 4pm
  • Must be willing and able to work occasional Saturday or Sunday shifts
  • The kitchen is not Halalcertified, however there is strictly no pork/lard and most ingredients are Halal.

Prerequisites/Requirements

  • At least 2 year's experience in a busy caterer, restaurant, cafes or hotel is required.
  • Good knowledge of different types of pastry, dessert, sandwiches, salads, cake decorating, and handling hot kitchen departments (preparing & marinating meats, vegetable mise en place, sauce making)
  • Flexibility to work in both hot and cold kitchens is preferred.
  • Valid Food Hygiene/Safety Certification with no record of prior violations.
  • Willing and eligible to undergo a criminal background check before working around children.

Role and Responsibilities
Daily Preparation and Production

  • Coordinate, manage and prepare all daytoday mise en place for the pastry/cold and the hot section of the kitchen
  • Prepare a wide variety of goods such as cakes, cookies, pies, bread, quiches, sandwiches, salads, sauces etc, following modern recipes.
  • Complete all production in a timely manner, following proper handling and temperature controls.
  • Maintain a lean and orderly cooking station and adhere to health and safety standards.
  • Ensure excellent quality throughout the food offerings, including checking the quality of raw and cooked food products to ensure that standards are met.
  • Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.
  • Assists in determining how food should be presented and creates decorative food displays.
  • Able to recognize superior quality products, presentations and flavours.
Administrative Duties

  • Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders to Head Chef within budget.
  • Check quality of material and condition of equipment and devices used for cooking.
  • Operates and maintains all department equipment and reports malfunctions, equipment problems and maintenance issues, known safety hazards, etc to supervisor immediately.
  • Monitors health and safety, and reports unsafe practices and procedures to supervisor immediately.
Leadership Duties

  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Encourages and builds mutual trust, respect, and cooperation among team members.
  • Serves as a role model to demonstrate appropriate behaviours.
  • Ensure compliance with food hygiene and Health and Safety standards.
  • Guide and motivate pastry assistants and bakers to work more efficiently.
  • Ensures compliance with all applicable laws and regulations.
