Planned, assign, and review the work of a large staff of cooks and food service personnel. coordinate the work activities of cooks and food service personnel in a large institutional kitchen. establish and maintain effective working relationships with subordinates and associates.Extend recipes to facility population requirements.
Fill pre-preparation and inventory pull sheets before every meal.
Orient and train programs for inmate workers.
Stick to sanitation and safety programs.
Display good communication and human relation skills as per Food Service Manager's directions.
Prepare meat, fish, poultry, vegetables and shellfish, sothy , gravies, sauces, and desserts.
Offer advice, counsel, and instruction to staff members.
Oversee food preparation for adherence to quality standards.
