    Description

    Job Summary: Experienced culinary professional sought to oversee daily kitchen operations, manage administrative tasks, and ensure high-quality food production in a fast-paced hotel environment.

    Job Responsibilities:

    • Support Executive Chef and team to ensure smooth daily operations.
    • Manage administrative duties, including team member records, payroll, scheduling, and purchasing requests.
    • Assist in menu preparation, recipe development, and plating guides.
    • Collaborate with receiving and purchasing team to control raw material quality.
    • Ensure food quality meets standards, adhering to "First in First out" best practice.
    • Monitor food production to ensure compliance with recipes and specifications.
    • Adhere to food presentation, production, and portioning controls.
    • Support Hygiene Manager and Executive Chef to achieve high food safety standards.
    • Ensure safe equipment use and provide guidance to culinary colleagues.
    • Develop and provide accurate recipes for line cooks.
    • Assist with job functions and on-the-job training for team members.
    • Estimate food consumption and requisition raw materials.
    • Minimize food waste and spoilage to meet budget requirements.
    • Prepare daily work lists and train line cooks on mise en place.
    • Provide daily briefings to team members on procedures and policies.
    • Offer feedback on job performance and maintain a work environment that values trust and transparency.
    • Maintain high productivity levels through efficient duty roster management.
    • Maintain high standards of grooming and customer relations.
    • Work in various areas of the hotel, including offices and kitchen.

    Requirements:

    • Vocational School or above education.
    • 7 years of managerial experience in a high-volume hotel or restaurant.
    • Comprehensive culinary background with skills in large kitchen environments.
    • Knowledge of Asian, Western, Italian, and Japanese cuisines.
    • Understanding of latest culinary concepts.
    • Computer skills for administrative work.
    • Basic accounting and food cost calculation knowledge.
    • Excellent logistical, culinary, and leadership skills.
    • Able to instill safety and sanitation habits.
    • Willing to work shift hours.
