Description
Duties and Responsibilities:
- Ensures that all food items produced by each section adheres to standard recipes and cooking procedures.
- Ensures that all personnel adhere to productions of BOILING, FRYING and MARINATION procedures.
- Ensures that all personnel uses necessary equipment, small-wares, tools and measuring devices.
- Performs and conduct checking Gerry's Grill GBA checklists.
- Performs and conduct Daily Shift Briefings prior to start of operations.
- Checks and approve Periodic Thawing Guides prepared by the GERRY's Grill ASM1.
- Ensures that personnel followed standard Stocking guide.
- Coordinate closely with the ASM1 / Branch Manager for his daily market list requirements (Vegetable Ordering).
- Checks the quantity requested placed by the Stockman prior to ordering.
- Ensures all machineries (Ventilation and Refrigeration) are maintained and working in good conditions.
- Monitors periodic PM's of Gas Line, Sewer Line, Exhaust systems, Refrigeration.
- Schedule Monthly General Cleaning of BOH.
