    Job Description

    The successful candidate will be part of the Inflight Services Food & Beverage team within Customer Experience Division. He/She will be responsible for developing the culinary offering to agreed standards for SIA's Global lounges, to design, implement and deliver, the Global Lounge food vision, including menu development to agreed standards across SIA lounges and service providers.

    Key Responsibilities

  • Provide a world class culinary experience in our lounges for all Singapore Airline guests, with the target to achieve the highest customer satisfaction ratings.
  • Manage Lounge F&B product delivery from catering contractors, by designing and implementing innovative and pleasing menus, and contribute towards being the world's leader in innovative airline/lounge catering.
  • Plan and implement innovative yet gastronomically pleasing food menus, by analysing and determining requirements of the route/flight, to and from the region to ensure variety, a well-balanced and nutritious offering, that also caters to the dietary (Special Meals), eg. religious and cultural needs.
  • Support and create recipes and detailed menu specifications (Standard Menu Cycle Charts, Portion Control, Correct Equipment Utilization and ingredients), for the region and suppliers by physical preparation and to support further development in kitchens, to achieve consistency in the dishes across the network.
  • Support budgeting, quality control, catering vendor management, contracts managements.
  • Work in collaboration with the SIA ISD F&B and Lounge teams by developing, trialling, and implementing new concepts,
  • Conduct and record quality checks by carrying out frequent lounge audits, record audits/issues of Performance Management to monitor and track contractor performance.
  • Support airline food & beverage activities & projects as and when required.
  • Responsibilities

  • Minimum 8 years in the hospitality industry of which at least 3 years should have been in a high volume and or airline catering and or lounge environment or an experienced in senior chef with positions held within five-star hotels and/or Michelin rated restaurants.
  • Knowledge of food production, development, food safety, and product distribution.
  • Must have extensive knowledge of global food product and service delivery trends and concepts.
  • Must demonstrate good contract management capabilities.
  • Good understanding of cultural dimensions and adapting to managing delivery of product from world-wide catering locations.
