• Proficient in the use of natural (essential oils, liquid extracts, oleoresins, absolutes, fruit juices) and synthetic (alcohols, aldehydes, acetals, ketones, acids, esters, sulfur compounds, nitrogen compounds, ethers, oxides, lactones) raw materials through active learning of constant smelling and tasting trials, and documentation effort
• Working alongside Senior Flavourist on fruits (apple, banana, blueberry, cherry, coconut, grape, durian, mango, passion fruit, peach, pear, pineapple, raspberry, strawberry and etc), citrus (grapefruit, lemon, lime, orange and etc), sweet (butter, chocolate, coffee, tea, alcohol, vanilla, honey and etc), and savoury (beef, cheese, chicken, tomato and etc) projects
• Handling new flavour creations, matching, and modifying existing flavours in accordance with customer requirements in terms of the target price, flavour type (Natural, Nature Identical, Artificial), regulation (Halal, Kosher), and application type (water-soluble, oil-soluble) by GC/MS analysis and sensory evaluation
• Modifying flavouring composition and flavouring form (from liquid to powder)
• Creating beverage emulsion and spray-dried powder
• Providing technical knowledge to other stakeholders (sales, purchasing, QC department, production)
• Independently inject and analyse flavour target samples using GC/MS
• Compounding flavours for sample order and producing library standards
• Participating in the sensory evaluation of new flavours and food products
• Testing flavours on applications such as bakery, beverage, dairy, and confectionery
• Entering and retrieving data using company database software
• Receiving, stocking and controlling raw materials, flavour samples and laboratory supplies
• Attended Agilent 5977 GC/MS Operation with MassHunter Data Analysis course
